Les lentilles corail seraient l&rsquo;un des premiers l\u00e9gumes cultiv\u00e9s par l&rsquo;homme et ils auraient \u00e9t\u00e9 consomm\u00e9es par les constructeurs des pyramides d&rsquo;Egypte. La lentille est un l\u00e9gume sec donc il est disponible \u00e0 l&rsquo;achat toute l&rsquo;ann\u00e9e, c&rsquo;est un l\u00e9gume que vous pouvez manger en toutes saisons. Pour rappel, l&rsquo;indice glyc\u00e9mique donne la quantit\u00e9 de glucose ing\u00e9r\u00e9e par le corps suite \u00e0 l&rsquo;absorption d&rsquo;un aliment. Le sucre pur a un indice glyc\u00e9mique de 100. Pour les v\u00e9g\u00e9tariens, la lentille corail apporte des prot\u00e9ines v\u00e9g\u00e9tales (comme alternative s\u00e9rieuse aux prot\u00e9ines animales) mais aussi des fibres.&nbsp;Les lentilles sont aussi riches en min\u00e9raux tels que le fer, le phosphore, le potassium, le magn\u00e9sium&nbsp;et &nbsp;les vitamines B&#8230; Attention \u00e0 ne pas trop les cuire, sinon elles vont perdre une partie de leurs int\u00e9rets nutritionnels !<\/p>\n\n\n\n<h2>Comme cuisiner les lentilles corail ?<\/h2>\n\n\n\n<p>Il est int\u00e9ressant d&rsquo;avoir un aliment aux qualit\u00e9s nutritionnelles ind\u00e9niables mais encore faut-il qu&rsquo;il soit facile \u00e0 cuisiner ! A la diff\u00e9rence des autres lentilles, les lentilles corail n&rsquo;ont plus de coques, ce qui diminue les temps de cuisson et facilite largement les pr\u00e9parations par rapport \u00e0 des lentilles vertes.<\/p>\n\n\n\n<p><strong>Soupe de lentilles corail pour l&rsquo;hiver<\/strong><\/p>\n\n\n\n<p>Faire revenir un oignon avec de l&rsquo;huile d&rsquo;olive dans le fond d&rsquo;une casserole. Ajoutez une carotte coup\u00e9e en petits morceaux dans les oignons. Ajoutez 300 grammes de lentilles, 1,5 litres d&rsquo;eau et un bouillon. Portez \u00e0 \u00e9bullition et faites cuire 10 minutes, les lentilles doivent \u00eatre tendres. Ensuite il faut mixer le tout et d\u00e9gustez !<\/p>\n\n\n\n<p><strong>Salade de lentilles pour l&rsquo;\u00e9t\u00e9<\/strong><\/p>\n\n\n\n<p>Cuire une quantit\u00e9 de lentilles corail dans 2,5 quantit\u00e9s d&rsquo;eau (pour la quantit\u00e9, il faut compter un demi-verre par personne) pendant 10 minutes, les essorer et les faire refroidir. Coupez des tomates en petits d\u00e9s. Une fois les lentilles refroidies, ajoutez les tomates et assaisonnez \u00e0 votre g\u00f4ut : poivre, jus de citron et ajouter un peu d&rsquo;huile d&rsquo;olive.
