J&rsquo;aime beaucoup cuisiner et pr\u00e9parer mon alimentation \u00e0 partir de produits frais. Il y a une chose qui peut paraitre simple mais qui est tr\u00e8s complexe : le pain. Je vous avais d\u00e9j\u00e0 donn\u00e9 une recette de pain blanc (avec une farine de type 55), ce pain n&rsquo;est sans doute pas le meilleur pour le sportif en terme d&rsquo;apport. C&rsquo;est pourquoi depuis quelques temps je mange du pain noir. Certains l&rsquo;appellent pain nordique, pain su\u00e9dois,&#8230;<\/p>\n<p>Le pain noir n&rsquo;est pas tr\u00e8s courant en France, car il a une histoire qui lui colle \u00e0 la peau (enfin \u00e0 la croute dans ce cas). Une expression populaire fran\u00e7aise dit \u00ab\u00a0Manger son pain noir\u00a0\u00bb, litt\u00e9ralement cela signifie avoir des difficult\u00e9s dans la vie. En effet, historiquement le pain noir \u00e9tait un pain de moins bonne qualit\u00e9, il \u00e9tait donc moins cher que le pain blanc. C&rsquo;\u00e9tait les plus pauvres qui mangeaient ce type de pain. Il parait m\u00eame que c&rsquo;est pendant la guerre qu&rsquo;on a fabriqu\u00e9 le pain noir avec diverses c\u00e9r\u00e9ales et ces c\u00e9r\u00e9ales donnent une couleur noire au pain.<\/p>\n<p>En Allemagne, ce type de pain est beaucoup plus r\u00e9pandu.\u00a0Le pain noir est compos\u00e9 de farine de bl\u00e9, d&rsquo;orge, de seigle, on y ajoute \u00e9galement des graines de lin (brun et jaune), de s\u00e9same et de tournesol.<\/p>\n<p>De nombreuses \u00e9tudes montrent l&rsquo;int\u00e9r\u00eat nutritionnel du pain complet, du pain de seigle et du pain noir. En effet, le pain blanc a de plus en plus mauvaise presse : trop raffin\u00e9, trop sucr\u00e9, indice glyc\u00e9mique \u00e9lev\u00e9,&#8230;<\/p>\n<p>Alors comment faire son propre pain noir. Il faut d\u00e9j\u00e0 trouver une bonne farine, pour ma part je me fournis chez un petit <a href=\"http:\/\/moulinjanot.fr\/\">meunier dans les vosges<\/a> (Meuniers depuis 6 g\u00e9n\u00e9rations autant dire qu&rsquo;ils savent de quoi il parle), il propose diff\u00e9rents types de farines. En prenant des grosses quantit\u00e9s c&rsquo;est toujours tr\u00e8s int\u00e9ressant compte tenu de la qualit\u00e9 de la farine pour le pain noir il faut compter 24 euros les 10 kilos soit pr\u00e8s d&rsquo;une vingtaine de pain.<\/p>\n<p>Avec ce type de farine, tout est dos\u00e9 et en particulier le sel. Il faudra rajouter dans vos ingr\u00e9dients un peu de sucre, de la levure de boulanger et de l&rsquo;eau.<\/p>\n<p>M\u00e9langez 20 grammes de levure de boulanger (un demi-cube) avec 30 cl d&rsquo;eau ti\u00e8de et 2 cuill\u00e8res a caf\u00e9 de sucre,\u00a0le sucre\u00a0va permettre d&rsquo;activer la levure.<\/p>\n<p>Patientez une vingtaine de minutes, la levure va commencer a faire de la mousse, c&rsquo;est bon signe.<\/p>\n<p>P\u00e9trissez (id\u00e9alement avec un robot) les 500 grammes de farine de pain noir avec le m\u00e9lange jusqu&rsquo;\u00e0 obtenir une belle boule, vous pouvez rajouter un peu si c&rsquo;est trop sec ou de la farine si c&rsquo;est trop humide.<\/p>\n<p>Mettez votre four \u00e0 temp\u00e9rature faible (40 degr\u00e9s) pendant une heure pour faire monter la p\u00e2te \u00e0 pain.<\/p>\n<p>Ensuite cuisez votre pain pendant 40 minutes \u00e0 200 degr\u00e9s (il faudra affiner en fonction de votre four)<\/p>\n<p>vous obtiendrez un beau pain comme sur la photo.<\/p>\n<p>Bon courage et bon app\u00e9tit !<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<a href=\"https:\/\/www.wanarun.net\/blog\/recette-de-pain-noir-maison-52279.html\"><img width=\"150\" height=\"150\" src=\"https:\/\/www.wanarun.net\/blog\/wp-content\/uploads\/2016\/10\/pain-noir-150x150.jpg\" class=\"alignleft tfe wp-post-image\" alt=\"\" loading=\"lazy\" srcset=\"https:\/\/www.wanarun.net\/blog\/wp-content\/uploads\/2016\/10\/pain-noir-150x150.jpg 150w, https:\/\/www.wanarun.net\/blog\/wp-content\/uploads\/2016\/10\/pain-noir-100x100.jpg 100w\" sizes=\"(max-width: 150px) 100vw, 150px\" \/><\/a><p>Sans forc\u00e9ment rentrer dans une psychose de ce qu&rsquo;il faut manger ou ne pas manger, j&rsquo;essaye en tant que sportif de faire attention \u00e0 mon alimentation.
