L&rsquo;arbuste id\u00e9al \u00e9tant pour moi le framboisier qui peut donner des fruits de mai \u00e0 novembre (ou plus pr\u00e9cis\u00e9ment jusqu&rsquo;aux premi\u00e8res gel\u00e9es). Un arbuste facile d&rsquo;entretien qui fait le d\u00e9lice des petits et des grands. J\u2019appr\u00e9cie particuli\u00e8rement son gout et sa pointe d&rsquo;acidit\u00e9. L&rsquo;id\u00e9e m&rsquo;est venue de transformer mes framboises en dopant naturel sous la forme la plus simple : la p\u00e2te de fruits.<\/p>\n<h2>Phase 1 : extraire le jus<\/h2>\n<p>Ce n&rsquo;est pas forc\u00e9ment la phase la plus simple mais il existe plusieurs techniques (plus ou moins on\u00e9reuses) :<\/p>\n<ul>\n<li>la technique du torchon : j&rsquo;enveloppe les framboises dans un torchon et j&rsquo;\u00e9crase avec les mains jusqu&rsquo;\u00e0 obtenir une mati\u00e8re s\u00e8che a l&rsquo;int\u00e9rieur du torchon<\/li>\n<li>la technique du tamis : je mets les fruits sur un tamis et les \u00e9crase avec un racloir<\/li>\n<li>la technique de la passoire fine : les fruits sont dans une passoire et j&rsquo;\u00e9crase avec une louche<\/li>\n<li>l&rsquo;extracteur de jus ou centrifugeuse (personnellement je fais beaucoup de jus de fruits, j&rsquo;utilise <a href=\"http:\/\/www.amazon.fr\/gp\/product\/B004N6Y6O8\/ref=as_li_ss_tl?ie=UTF8&amp;camp=1642&amp;creative=19458&amp;creativeASIN=B004N6Y6O8&amp;linkCode=as2&amp;tag=wanarun-21\">JuicePresso<\/a>&#8230; c&rsquo;est assez magique et tr\u00e8s efficace)<\/li>\n<\/ul>\n<h2>Phase 2 : la cuisson<\/h2>\n<p>Vous allez maintenant peser le jus extrait, il faut le m\u00e9langer avec du sucre.<\/p>\n<p>Pour 100 grammes de jus, ajouter dans la casserole 100 grammes de sucre (de pr\u00e9f\u00e9rence sucre roux bio) et 2 grammes d&rsquo;Agar Agar (c&rsquo;est un g\u00e9lifiant issu d&rsquo;algues rouges japonaises).<\/p>\n<p>Faites chauffer l&rsquo;ensemble jusqu&rsquo;\u00e0 \u00e9bullition et maintenez pendant 30 secondes (il faut tourner le m\u00e9lange durant toute la cuisson avec une cuill\u00e8re). Ensuite disposer le liquide dans un moule silicone pour faire des petits d\u00e9s (ou dans un plat rectangulaire). Laisser prendre le tout au frigo.<\/p>\n<h2>Phase 3 : d\u00e9guster<\/h2>\n<p>Maintenant \u00e0 vous de voir, moi j&rsquo;adore la framboise (ainsi que les fruits rouges) mais vous pouvez utiliser cette recette avec tous les jus de fruits et \u00e9galement faire des mix (n&rsquo;h\u00e9sitez pas \u00e0 ajouter du jus de citron ou de kiwi). Les fruits rouges, \u00e7a donne un bon petit coup de fouet.
