La composition des aliments mais aussi leur provenance. Cela fait plus de 10 ans que je cherche une recette de pain et aussi une cuisson car c&rsquo;est tout aussi d\u00e9licat. Cette recette est finalement assez simple et s&rsquo;applique \u00e0 diff\u00e9rents types de farines. J&rsquo;ai essay\u00e9 avec des farines aux c\u00e9r\u00e9ales, des farines proven\u00e7ales, au s\u00e9same,&#8230; et tout se passe bien.<\/p>\n<p>Attention m\u00eame avec tous ces pr\u00e9cieux conseils, il faudra peut \u00eatre faire des ajustements en fonction de votre four&#8230; Par exp\u00e9rience chaque four est diff\u00e9rent et ne rend pas forc\u00e9ment de la m\u00eame fa\u00e7on la chaleur.<\/p>\n<p>Ingr\u00e9dients :<\/p>\n<ul>\n<li>430 g d&rsquo;eau ti\u00e8de (M\u00eame temp\u00e9rature que si vous preniez une douche<\/li>\n<li>750 g de farine (Celle que vous voulez mais j&rsquo;en vous en dirais plus apr\u00e8s)<\/li>\n<li>2 cuill\u00e8res \u00e0 caf\u00e9 rases de sel<\/li>\n<li>20 g de levure de boulanger (petit cube de 42 grammes en g\u00e9n\u00e9ral prenez la moiti\u00e9)<\/li>\n<\/ul>\n<p>Dans un premier temps, je mets la levure dans l&rsquo;eau ti\u00e8de et je la dilue pour qu&rsquo;il n&rsquo;y ait plus de grumeaux. Ensuite je m\u00e9lange le sel dans la farine. Quand les deux pr\u00e9parations sont biens homog\u00e8nes, je m\u00e9lange les deux (soit \u00e0 la main dans un gros saladier, soit dans un robot p\u00e9trin). Si vous le faites \u00e0 la main, vous allez voir c&rsquo;est un peu physique. Je peux rajouter un peu de farine si c&rsquo;est trop gluant ou un peu d&rsquo;eau si c&rsquo;est trop sec.<\/p>\n<p>Maintenant que la partie la plus simple est finie, nous allons voir la partie la plus compliqu\u00e9.<\/p>\n<p>Dans un premier temps, il faut faire lever la p\u00e2te dans une atmosph\u00e8re l\u00e9g\u00e8rement humide. Pour cela, vous pouvez par exemple faire bouillir de l&rsquo;eau dans une casserole, puis mettre votre saladier et la casserole dans le four \u00e9teint. Vous laissez ainsi pendant 30 a 40 minutes.<\/p>\n<p>La p\u00e2te a d\u00fb gonfler et elle prend plus de volume dans le saladier. Vous pouvez maintenant la sortir et la p\u00e9trir un peu tout en rajoutant un peu de farine pour qu&rsquo;elle ne colle pas de trop.<\/p>\n<p>Faites maintenant soit des formes de petits pains, des baquettes, des marguerites,&#8230; Pendant ce temps mettez le four en route \u00e0 250\u00b0C chaleur tournante avec de l&rsquo;eau dans le l\u00e8che frites. Quand le four est \u00e0 temp\u00e9rature, enfournez pour 20 minutes en surveillant&#8230; en fonction du four la dur\u00e9e sera diff\u00e9rente \u00e0 vous d&rsquo;ajuster&#8230;<\/p>\n<p>Cette recette doit fonctionner si vous avez un r\u00e9gime sans gluten en prenant une farine sans gluten&#8230; \u00e0 confirmer&#8230;<\/p>\n<p>Apr\u00e8s j&rsquo;esp\u00e8re que vous rejoindrez le groupe de ceux qui font leur pain maison&#8230;<\/p>\n<p>Pour en revenir \u00e0 la farine, j&rsquo;ai d\u00e9couvert qu&rsquo;il y avait encore en France des petits meuniers fort sympathiques qui produisaient leurs propres farines et la vendait en direct. Je vous assure qu&rsquo;utiliser ce genre de produits n&rsquo;a plus rien \u00e0 voir avec les farines de la grande distribution : pains, brioches, p\u00e2tisseries,&#8230; tout prend une autre dimension.
